Ham Nuggets

1 pound ground ham
5 cooked mashed potatoes mix with just butter salt and pepper
1/4 cup gratted cheddar cheese
5 green onions minced
2 eggs

Mix ham, cheese green onions and one egg together. Make little patties and wrap ham with mashed potato and roll in eggs. Fry in the pan. Very nice recipe for rest of ham. Kids love it too

Chocolat Volcano Cake

6 squares bittersweet chocolate
2 squares semisweet chocolate
1 1/4 stick butter (10 tablespoons)
1/2 cup all purpose flour
1 1/2 cups confectioners sugar
3 large eggs
2 egg yolks
1 teaspoon vanilla extract
2 tablespoons orange liquor

Preheat oven at 425 F.
Grease 6 (6 ounce) custard cups. Melt the chocolates and butter in the microwave, or in a double boiler. Add the flour and sugar to chocolate. Stir in the eggs and yolks until smooth. Stir in the vanilla and orange liquor. Divide the batter eventy among the cups. Place in the oven and bake for 14 minutes. The edges should be firm but the center will be runny. Run a knife around the edges to loosen and invert on to dessert plates. Do not leave to cake longer otherwise it will be hard. Very delicious.

Pesto Sauce

2 Cups loosely packed fresh basil leaves
1/3 cup pine nuts
2 medium garlic cloves peeled
1/2 cup grated parmesan cheese
1/2 cup extra virgin olive oil
salt and pepper to taste

In a food processor, process first 4 ingredients to a paste. With the machine still running slowly pour olive oil, throug the feed tube. If the sauce seems too dry, add a little more olive oil. Season with salt and pepper. Can be store in a refrigerator up to 1 week. Enjoy

Caesar salad dressing

2 tablespoon of fresh lemon juice
3/4 teaspoon Dijon mustard
3/4 teaspoon Worcestershire sauce
1 garlic cloves pressed
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 cup mayonnaise Hellman
1/2 cup olive oil
1/4 cup fresh Parmesan cheese grated
Place in a bowl lemon juice, add mustard, Worcestershire, garlic salt and pepper. Whisk really well, add mayonnaise and mix again. While whisking, add oil and continue until well mix then add Parmesan cheese. Can be refrigerated for 2 week. It's delicious.

Brocoli Quiche

1 pie dough, (can use the one in frozen section)
1/2 cup ham cubes
1/2 cup green onions
4 beaten eggs
1 tbsp corn starch
1/2 cup minced mushroom
1/2 cup of cream
1/3 cup of milk
1/2 cup or shredded cheddar cheese
1/2 cup of brocoli
1/4 parmesan

Cook brocoli and set aside. Beat eggs and cream together then add cheddar cheese and mix. Add milk and corn starch then mix again. In a pan saute green onion mushroom and ham. Let it cool before put it in the pie tray. Add your creamy mixture in the pie tray over top of the ham. Decorate your quiche with small branches of brocoli. Top it with parmesan cheese. Cook in the oven at 350 f. for about 45 minutes. Enjoy, it's delicious and easy to do.

Peas soup canadian style

4 cup of split peas
1 cup of ground cook ham
1 ham bone
12 green onion chopped minced
1 tsp salt
1/2 tsp pepper
2 tsp parsley
2 tbsp of chicken broth
1/2 tsp ground thym
10 cup of water.

It's a large recipe but it cook for so long it's why I prefer make it double and freeze it.
Combine all ingredient in a large pot and cook at low heat for 8 to 10 hours. Add water if it's get too low. Take the ham bone out in the end.
Very tasty soup, love it.
