Beef for stew, (I used flan but it was to hard meat)
3 Carrots sliced
5 green onions
1 bay leaf
1/2 tsp cumin
3 garlic clove minced
2 tomato chopped
salt and pepper
serve with rice cilantro and black beans.
And Cheese Queso.

Brown the meat both side then bring to boil with water and bay leave salt and pepper, 1/2 green onion and 1/2 garlic. Boil for at least 1 hour and haft or 2 hours. The meat need to shred easy. Remove the meat, drain water, saute in oil and butter rest of the green onions and garlic carrot tomato, cumin, salt and pepper. Heat at low for about 30 minutes until carrots are done. Add beef. Serve with black bean, rice with cilantro and cheese. We liked it but I didn't use the right type of beef. Beef stew will be much better. Kids didn't like it that much because the meat was hard. But flavor is great.

Tokelau Islands

This week my daughter pick the country Tokelau. It is a country but it's a new zealand dependent territory since 1926. It's 3 little little little islands in south pacific named Atafu, Nukunonu and Fakaofo. There is no airport, no bank, one small hotel, population around 1500. You have to get there by boat. I couldn't find any recipe from that place. If anyone have any, let me know.

Jamaican Jerk Chicken

Chicken breast or any type of meat
Marinated in Jerk Jamaican spices
It's on the picture

It's a typical dish from Jamaica. They marinated the meat for several hour then cook it on the grill. It's nice but I found the flavor much too stronge. We didnt' like it that much but you can try if you like stronge flavor.

Jamaican Roast Fish

Fish Fillet
1 tsp Paprika
1 scotch pepper
3 tbsp butter
3 green onions
2 garlic cloves minced
thymes
salt and pepper
juice of one lime

Brush fish with lime juice and marinate with all ingredients for few hours. Rub fish with butter put in the oven at 350 for about 20-30 minutes. Easy to do but I don't like fish in oven. I think it taste fishy. I like my fish in a pan. I think I would to it in a pan on the stove next time. I didn't put any pepper for the kids, they like it, just me I didn't.
