Ham Nuggets

1 pound ground ham
5 cooked mashed potatoes mix with just butter salt and pepper
1/4 cup gratted cheddar cheese
5 green onions minced
2 eggs

Mix ham, cheese green onions and one egg together. Make little patties and wrap ham with mashed potato and roll in eggs. Fry in the pan. Very nice recipe for rest of ham. Kids love it too

Chocolat Volcano Cake

6 squares bittersweet chocolate
2 squares semisweet chocolate
1 1/4 stick butter (10 tablespoons)
1/2 cup all purpose flour
1 1/2 cups confectioners sugar
3 large eggs
2 egg yolks
1 teaspoon vanilla extract
2 tablespoons orange liquor

Preheat oven at 425 F.
Grease 6 (6 ounce) custard cups. Melt the chocolates and butter in the microwave, or in a double boiler. Add the flour and sugar to chocolate. Stir in the eggs and yolks until smooth. Stir in the vanilla and orange liquor. Divide the batter eventy among the cups. Place in the oven and bake for 14 minutes. The edges should be firm but the center will be runny. Run a knife around the edges to loosen and invert on to dessert plates. Do not leave to cake longer otherwise it will be hard. Very delicious.

Pesto Sauce

2 Cups loosely packed fresh basil leaves
1/3 cup pine nuts
2 medium garlic cloves peeled
1/2 cup grated parmesan cheese
1/2 cup extra virgin olive oil
salt and pepper to taste

In a food processor, process first 4 ingredients to a paste. With the machine still running slowly pour olive oil, throug the feed tube. If the sauce seems too dry, add a little more olive oil. Season with salt and pepper. Can be store in a refrigerator up to 1 week. Enjoy

Caesar salad dressing

2 tablespoon of fresh lemon juice
3/4 teaspoon Dijon mustard
3/4 teaspoon Worcestershire sauce
1 garlic cloves pressed
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 cup mayonnaise Hellman
1/2 cup olive oil
1/4 cup fresh Parmesan cheese grated
Place in a bowl lemon juice, add mustard, Worcestershire, garlic salt and pepper. Whisk really well, add mayonnaise and mix again. While whisking, add oil and continue until well mix then add Parmesan cheese. Can be refrigerated for 2 week. It's delicious.

Brocoli Quiche

1 pie dough, (can use the one in frozen section)
1/2 cup ham cubes
1/2 cup green onions
4 beaten eggs
1 tbsp corn starch
1/2 cup minced mushroom
1/2 cup of cream
1/3 cup of milk
1/2 cup or shredded cheddar cheese
1/2 cup of brocoli
1/4 parmesan

Cook brocoli and set aside. Beat eggs and cream together then add cheddar cheese and mix. Add milk and corn starch then mix again. In a pan saute green onion mushroom and ham. Let it cool before put it in the pie tray. Add your creamy mixture in the pie tray over top of the ham. Decorate your quiche with small branches of brocoli. Top it with parmesan cheese. Cook in the oven at 350 f. for about 45 minutes. Enjoy, it's delicious and easy to do.

Peas soup canadian style

4 cup of split peas
1 cup of ground cook ham
1 ham bone
12 green onion chopped minced
1 tsp salt
1/2 tsp pepper
2 tsp parsley
2 tbsp of chicken broth
1/2 tsp ground thym
10 cup of water.

It's a large recipe but it cook for so long it's why I prefer make it double and freeze it.
Combine all ingredient in a large pot and cook at low heat for 8 to 10 hours. Add water if it's get too low. Take the ham bone out in the end.
Very tasty soup, love it.

Beans canadian

2 cup of dry red kidney beans
1/2 lb salt lard
1/4 cup dark brown sugar
1/4 cup molasse
1 tsp dry mustard
1/4 cup ketchup
Pepper
1 tsp salt

Clean your bean and be sure there is no rock in it. Cover them in cold water all night in a big bowl (12 hours). Then boil them for 1 hour. Through the water. Preheat oven at 250 f. cut the salt pork in small dice. and put half in a deep high strong pot like (clay pot). add the beans and the rest of the pork. Mix all other ingredient together the poor it on top of the beans. Cover all with warm water. cook in oven for about 7 to 8 hours. Verify the level of water every 2 hours. Just had water if it look too low.

It's delicious. You can also use smaller beans. But that's good big beans.

Creton Quebecois (it's like a cold pate or meat loaf)

2 lb of ground pork not too fat, not too lean
1/4 lb bacon chop very very small
10 green onions chop finely
2 garlic clove minced finely
1/2 tsp of dry thym
1/2 tsp of dry sauge
1 pinch of all spice
1 tbsp of salt
1/2 tsp pepper
1 1/2 cup of water

Cook the bacon in a deep pan. add all the other ingredients except water. Mix well then add water. Cook at low heat for about 1 hour 1/2. Mix every 1/2 hours. Blend with hand blender if you have otherwise just put it in many small containers when it's warm. It's easy to freeze. It's not as fatty as the original. I prefer this one. Enjoy! 

Apple Pie

One pie Dough (have a look at my recipes)
5 apples (around 5 medium)
sugar

Very easy, just slice your apple small, not too big. Roll your dough for 9 inch pie. Sprinkle a little bit of sugar in the bottom of your pie. Add your sliced peeled apple. Sprinkle a little bit more suger on top. Some people add a little bit of cinamon it a choice. To it with the dough. Don't forget to live some holes to let the steam out. Sprinkle a little bit of milk on top of your crust so it get brown in the oven. Preheat oven for 350 f. Bake for about 50 minutes. Depends on oven. Enjoy!

Pie Dough

5 1/2 cup of flour
1 tsp of salt
4 tsp of baking powder
1 lb shortening COLD
1 egg
1 tbsp white vinegar
1 can of 7up very COLD

* First in a bowl beat eggs and vinegar together then add 7up. Put back in the fridge.
* In a large bowl mix flour baking powder and salt. Add shortening and with 2 big forks cut in little pieces in to the flour. You have to go fast. Then go with your hand to mix the graise with the flour until you reach the point where it look like big peas.
* Make a holl in the middle of the flour and pour haft of the 7up mixture. Fold the flour in to it with a fork the add the reste of the 7up. Mix all the flour, sometimes it's easy with your hand. If there's still flour loose, take a little bit of very cold water to help mix it. It will be a very sticky dough.
* DO NOT Manipulate your dough to much. Just put it in the fridge wrapped inside cold humide dish cloth.
* Put in the fridge for at least  2 hours but it's better if it's stay overnight. The dough will be easy to roll. It can be freeze easy too.
* It make around 5 pie of 9 inch.

I love this recipe. It's easy and my dough was perfect and flaky. Love it so much!

Tania's Famous Dip

1 poblano pepper
6 green onions
4 cup of cilantro
juice of one lemon
3/4 cup of whipped cream cheese
salt and pepper

Put everything in blender except 1/2 cup of cream cheese. Mix very well. It takes a little bit of time, you have to stir often because of the cilantro. When finish transfer to a bowl and mix the rest of the cream cheese with a fork. Refrigerate for at less 2 hours. Very Good!

Chicken Souffle

4 tbls butter soft
1/4 cup flour
1 1/2 cup of milk
1/2 tsp nutmeg
salt and pepper
1 1/2 cup of grated cheese
1 cup parsley chopped finely
chicken already cut 1 cup or 1 1/2cup
6 eggs yok
7 eggs white
2 slice of white bread in cube remove crust

Butter your souffle dish 8 quart.
Put oven at 400 degre. Heat butter and flour, whisk milk smooth into cream. Simmer about 5 minutes. Add nutmeg salt and pepper. Remove from heat add cheese, parsley chicken egg yok and bread. Mix well. Bring egg white into snow. around 2 minutes. take 1/4 of the eggs and mix with the chicken. Then add the rest of eggs by folding the eggs carefully. Do not over mix. Put in the oven for about 50 minutes. It's absolutely delicious. Kids love it so much. They love the texture. Great great recipe. Easy to do. Just try it!

Indonesian Stuffed Pepper

6 Pepper top cut and empty (keep the top)
1 pound ground beef
1 pack of mushroom diced small
1/4 cup peanut crushed
4 green onions
3 garlic clove minced
3 tbls Red wine
1 habanero pepper minced
crushed hot pepper ( all depend how spicy you like it)
salt and pepper
1 tps Oregano
1/4 cup parmesan cheese

First saute mushroom in garlic and butter, cook really well until they shrink. Set aside and use the same pan to cook the beef with green onion add all ingredient except the cheese. cook well then add mushroom and parmesan cheese. Stuffed your pepper with the mix. Cook in oven for 20 minutes at 375, then add the cap and cook for another 15 minutes. Very delicious but kids don't like it, it's too spicy.

Tomato Spread Dip

2 Tomatos diced
3 Green onions
2 garlic cloves minced
1 tbls fresh rosemary
juice of one lemon
1 tbls olive oil
salt and pepper

Take the juice out of the tomato as much as possible. Mix all ingredient. Refrigerated for at less 3 hours. Ready to eat with tortilla chips.

Fish Couscous

2 Fish Fillet
fresh Parsley
fresh cilantro
3 green onions
2 Garlic clove minced
1 tbls of fresh ginger
1 cup of couscous
1 cup cauliflower cooked
1 cup brocoli cooked
1/2 cup asparagus cooked
1 can of black bean
1/4 cup of chicken broth
1/4 cup lemon juice
Oil
Salt and pepper

First cook your couscous and your vegetable. Chop your herbs and mix haft of it with oil lemon juice salt and pepper. Rinse your fish then dry with paper towel. Dip your fish in the oil mix herbs. Cook the fish in a pan. Set aside when cooked. Take the same pan add garlic and onion and ginger. Saute for one minute. Add all of the other ingredient on low heat. Mix well. Salt and pepper. Chop your fish then mix with the couscous. Very good recipe and kids enjoy too.

Roasted Chicken with brown rice Stuffing

Whole Chicken clean

For stuffing
1 cup cooked brown rice
1/2 cup celery diced small
3 green onions
1 garlic clove minced
2 tbls butter soft
Fresh basil, parsley and rosemary
Salt and pepper

Mix all ingredient by hand. Stuffed your chicken then season your chicken on top with oil, salt and pepper and try basil and thyme. Cook chicken in the oven at 350  for about 1h30 minute. Take temperature if you need to know if it's ready. Chicken have to be at 165 degree F. I baste my chicken every 20 minute to have it juicy.

Roasted Potatoes

Potatoes (babies one are better) cut in half
Fresh Rosemary
2 garlic cloves minced
Olive oil
Sea salt and pepper

Set Oven at 400 oF. Mix in a bowl all ingredient with your hand. Put in a cast Iron pan. Put in the oven for about 45 minutes. Mix half way to roast all side. We love that recipe. It's one of my best potatoes recipe.

Menu diet for Week one


This is the menu but I suggest that you start only next week the diet because I will give you all the detail recipes and also your grocerie list for the week. I really hope you will follow and try to give some good word for my husband so he don't give up. It's very important for everybody's health. No more fast food. Just simple food but taste fresh. You won't like the taste of Mc donald after 4 weeks of this. I will help you with it. Just keep it on. Look at the menu often because it's not finish yet. I will update the menu.

Food to AVOID
Sugar, Dairy products but not butter or heavy cream, white flour, yeast, mushroom, sauerkraut, cheeses, juices, beer, food additives and preservatif. (simple if you don't know the name of the ingredient on the bottle, it's probably not good for you)

Candida Diet will also avoid
Vinegar, wine, fruit, seeds and nuts but I will not prepare my meal this way. You can avoid those if you want to be really strict.

What to Drink
Water, Perrier, La Croix, Talking Rain, no artificial sweetener, Herbal Tea (green tea), no caffeine, but if you want you can have only one cup of coffee a day but no sugar.

This is some product you are safe to have.  I will give you more list later.

Candida Yeast Diet start saturday/ Diete sans levure a partir de samedi

Hi everyone, Saturday we will start again our candida yeast free diet. You can follow use. I will do a detail diet plan. It's easy but you just have to ride of all chemical you have in your house. We just cook basic ingredient. No white flour, no cheese, bread with no yeast, cracker with no yeast. I will guide you with what to buy and what not to buy. The best is a lot of grain, vegetable, and organic meat and fresh herbs. Some candida diet ask for no vinegar but last time It was really hard. I will work on the menu plan today and post it as soon as possible.

Samedi nous allons recommencer notre diet sans levure Candida. Vous pouvez nous suivre sur le blog. Je vais faire un plan d'alimentation en détail. Il est facile, mais il vous suffit de vous defaire de tous les produits chimiques que vous avez dans votre maison. Nous fesons cuire des ingrédients de base seulement. Pas de farine blanche, pas de fromage, pain sans levure, cracker sans levure. Je vais vous guider avec ce qu'il faut acheter et quoi ne pas acheter. Le mieux c'est un lot de grains, de légumes et de viandes biologiques et d'herbes fraîches. Certains alimentation candida demander aucun vinaigre, mais la dernière, c'était vraiment difficile. Je vais travailler sur le plan de menu aujourd'hui et le mettre dès que possible sur le blog.
