Peas soup canadian style

4 cup of split peas
1 cup of ground cook ham
1 ham bone
12 green onion chopped minced
1 tsp salt
1/2 tsp pepper
2 tsp parsley
2 tbsp of chicken broth
1/2 tsp ground thym
10 cup of water.

It's a large recipe but it cook for so long it's why I prefer make it double and freeze it.
Combine all ingredient in a large pot and cook at low heat for 8 to 10 hours. Add water if it's get too low. Take the ham bone out in the end.
Very tasty soup, love it.

Beans canadian

2 cup of dry red kidney beans
1/2 lb salt lard
1/4 cup dark brown sugar
1/4 cup molasse
1 tsp dry mustard
1/4 cup ketchup
Pepper
1 tsp salt

Clean your bean and be sure there is no rock in it. Cover them in cold water all night in a big bowl (12 hours). Then boil them for 1 hour. Through the water. Preheat oven at 250 f. cut the salt pork in small dice. and put half in a deep high strong pot like (clay pot). add the beans and the rest of the pork. Mix all other ingredient together the poor it on top of the beans. Cover all with warm water. cook in oven for about 7 to 8 hours. Verify the level of water every 2 hours. Just had water if it look too low.

It's delicious. You can also use smaller beans. But that's good big beans.

Creton Quebecois (it's like a cold pate or meat loaf)

2 lb of ground pork not too fat, not too lean
1/4 lb bacon chop very very small
10 green onions chop finely
2 garlic clove minced finely
1/2 tsp of dry thym
1/2 tsp of dry sauge
1 pinch of all spice
1 tbsp of salt
1/2 tsp pepper
1 1/2 cup of water

Cook the bacon in a deep pan. add all the other ingredients except water. Mix well then add water. Cook at low heat for about 1 hour 1/2. Mix every 1/2 hours. Blend with hand blender if you have otherwise just put it in many small containers when it's warm. It's easy to freeze. It's not as fatty as the original. I prefer this one. Enjoy! 

Apple Pie

One pie Dough (have a look at my recipes)
5 apples (around 5 medium)
sugar

Very easy, just slice your apple small, not too big. Roll your dough for 9 inch pie. Sprinkle a little bit of sugar in the bottom of your pie. Add your sliced peeled apple. Sprinkle a little bit more suger on top. Some people add a little bit of cinamon it a choice. To it with the dough. Don't forget to live some holes to let the steam out. Sprinkle a little bit of milk on top of your crust so it get brown in the oven. Preheat oven for 350 f. Bake for about 50 minutes. Depends on oven. Enjoy!

Pie Dough

5 1/2 cup of flour
1 tsp of salt
4 tsp of baking powder
1 lb shortening COLD
1 egg
1 tbsp white vinegar
1 can of 7up very COLD

* First in a bowl beat eggs and vinegar together then add 7up. Put back in the fridge.
* In a large bowl mix flour baking powder and salt. Add shortening and with 2 big forks cut in little pieces in to the flour. You have to go fast. Then go with your hand to mix the graise with the flour until you reach the point where it look like big peas.
* Make a holl in the middle of the flour and pour haft of the 7up mixture. Fold the flour in to it with a fork the add the reste of the 7up. Mix all the flour, sometimes it's easy with your hand. If there's still flour loose, take a little bit of very cold water to help mix it. It will be a very sticky dough.
* DO NOT Manipulate your dough to much. Just put it in the fridge wrapped inside cold humide dish cloth.
* Put in the fridge for at least  2 hours but it's better if it's stay overnight. The dough will be easy to roll. It can be freeze easy too.
* It make around 5 pie of 9 inch.

I love this recipe. It's easy and my dough was perfect and flaky. Love it so much!
