Gallo Pinto (Bean & Rice)

  • Gallo Pinto (Bean & Rice)
2 tbsp Vegetable oil
4 green onions
2 cloves garlic minced
3 cup of cooked rice
1 can of black beans drained and rised
1 tsp cumin
1 tps ground coriander
1/2 tsp ground ginger
salt & pepper
Fresh cilantro

Saute green onion in oil, add garlic, add spice but not cilantro. Add bean and rice mix well and heated until warm. Serve warm and garnish with fresh cilantro. Wow, the kids love it. Enjoy

Costa Rica Chicken Marinated

  • Costa Rica Chicken marinated
1 Grated lime peel
Juice of one lime
1/4 cup tomato juice
bunch of cilantro
1 tbsp vegetable oil
Salt
1/8 tsp Red pepper sauce
2 Cloves garlic minced

Mix all ingredients in a plastic bag and marinate chicken, pork or beef for at least 8 hours. Cook on a grill or pan. Serve with Gallo pinto (bean & rice). Very nice recipe, kids enjoy too.

We begin our week with the tasting of dishes from costa rica. Costa Rica does not have many varieties, but we'll still cook 3 dishes typical of Costa Rica. Tonight we will eat a marinated chicken served with gallo pinto. We will also make this week tilapia from Costa Rica and tortillas with beef. So good week and good trip to Costa Rica.

Nous débutons notre semaine avec la dégustation de plats du costa rica. Le costa rica n'a pas énormément de variétés mais nous allons tout de même cuisiner 3 plats typique du costa rica. Ce soir nous mangerons un poulet mariné servi avec la gallo pinto. Nous allons aussi cette semaine faire le tilapia du costa rica et des tortillas au boeuf. Russia Beef Stroganoff



  • Russia Beef Stroganoff
Beef sirloin cut into strips or venisson
salt
3/4 tsp ground black pepper
5 tbsp Butter
mushroom sliced
4 green onions
1 tbsp tomato paste
2 tbsp flour
1 can of beef broth
5 tbsp sour cream
2 tsp dijon mustard
Fresh basil
egg noodle

Cook the noodle first and et aside.
Cook beef in butter with salt and pepper, do not over cook otherwise it will be hard. Tranfer beef in plate. Add mushroom in the pan cook until well browned and add green onions. Add tomato paste, whisking constantly add a little bit of butter add the flour. Add the beef broth slowly, don't forget to keep whisking, lower the heat add sour cream and mustard then the meat and the basil. Rinse pasta in hot water. Put in the plate and top it with the beef. Very delicious. Enjoy

Indian Fish Dahi Machi

Dahi Machi
Fish Fillet
2 tsp dry mustard Mix in a little bit of water
flour
oil
4 green onions
a little of fresh ginger
2 garlic cloves minced
1/2 tsp turmeric
1/2 tsp cayenne
1/4 tsp cumin
1/4 tsp cinnamon
1/8 tsp cloves
1/4 tsp cardamom
2 tsp salt
1 cup 1/2 plain yogurt

Garnish with fresh cilantro and green chilies minced

flour the fish, and browned about 1 minute per side in the pan. Move to plate, reheated the oil and add green onion about 3 minutes then add ginger and garlic, saute for 1 minute. Add all spice but not the mustard saute 15 sec. Remove from heat add yogurt and mustard. Put in blender to have a smoot paste. Bring back in the pan simmer and add fish. Cook for 3 to 4 minute per side cover in. Garnish in your plate.
I was so suprise that my kids eat that fish so fast. They loved it. It's amazing. Enjoy

Vietnamese barbecue Rolls



  • Vietnamese barbecue Rolls
  • ground beef
  • 2 garlic cloves minced
  • 2 tbls fish sauce
  • Juice half of a Lemon
  • 1 tbsp sugar
  • salt and pepper
  • basil leaves
  • dry peanut chopped for garnish
  • Mix fish sauce and sugar together. Mix garlic, lemon, fish sauce salt and pepper in the meat. Mix with your hand. Lay down basil leave and roll the meat inside. Put your meat on a skewers. Cook on barbecue for 3 minutes each side. Garnish on top with peanut in your plate. Kids again love it. Enjoy

Travel with me

I decided to travel to dishes. I'll make a country per week. I'll randomly pick a country and I'll Cook all week in the way of this country. I will begin the week next with Costa Rica because we are going to visit this country in true in some months. This is my way to travel without flying. Let me know if you have good recipe. Voyage avec moi

J'ai décidé de voyager en plats. Je vais faire un pays par semaines. Je vais piger au hasard un pays et je vais cuisiner toute la semaine a la facon de ce pays. Je vais commence la semaine prochaine avec le Costa Rica car nous allons visiter ce pays en vrai dans quelque mois. C'est ma facon de voyager sans prendre l'avion. Macaroni salad

  • Kids best Macaroni Salad

    Short macaroni cook, rinse and cool in fridge
    small dice cucumber
    small dice deli meat, can be ham, turkey, chicken
    small dice cheddar cheese
    green onion
    salt & pepper
    a little bit of tried basil
    mayonnaise Hellman (important otherwise doesn't do the same, kids won't like it)

    Very simple, mix everythings. Taste all the time when you add ingredient. Kids enjoy and they don't realize that they eat everything healthy.

Sates skewers Sri Lanka



  • Sates skewers Sri Lanka
Marinate for Chicken

Boneless chicken breasts
1 tbsp Paprika
2 tsp ground coriander
salt and black pepper
2 garlic cloves, minced
3 tbsp Olive oil

Cut chicken lenghtwise small slice
marinate chicken for at least 1 hour

Prepare the sauce with
3 tbsp olive oil
4 green onions
1 tbsp fresh ginger minced
2 garlic cloves minced
1 tsp ground cumin, 1tps ground coriander
1/2 tsp paprika, 1/2 tsp ground turmeric
salt and pepper
1 cup coconut milk
2 tsp white vinegar

Saute green onion in oil, add ginger, garlic and the spice. Stirring occasionally for 5 to 10 minutes. Add Coconut milk and vinegar. Let simmer until thick a little bit about 5 minutes. Reserve
Put chicken on a skewers, grill on a barbecue it's around 3 to 6 min. When cook just had the sauce on top of it with a brush. The kids love it because it's a little sweat. Enjoy

Chili Texan

Chili Texan

Ground beef, or venisson or turkey
can of black beans or pinto beans
6 carrot cubed small
Can of diced tomato
Can of tomato sauce
Green Onion
chili powder
Red pepper crushed
Pepper cayenne
Oregano
Cumin powder
Ginger powder
Curry powder
Turmeric powder

Brown meet with butter and green onion. Add can of diced tomato, bean add all the spice. I didn't put any quantity for the spice because it's all depend on your taste. I do separed pot for the kids and I don't add any red pepper crushed. Chili powder is the first ingredient. I like my chili spicy. Taste all the time to be sure you like it. Add tomato sauce when the liquid is very low. Cook for at less 1 hour to 1 hour and half. Enjoy.

Hummus

Hummus

1 small clove garlic minced
1 can garbanzo beans, reserve liquid from can
3/8 cup liquid from garbanzo beans can (save the rest until finished)
3 or 4 tbsp lemon juice (approx 1/2 lemon)
3 tbsp tahini
1/2 tsp sea salt
1/2 cumin powder
2 tbsp olive oil

Garnish with drizzle with oil and sprinkle of paprika

Place all ingredients in blender.
Blend until creamy and well mixed. (add add. liquid from garbonzo bean can to desired consitancy.
Put in refrigerator.
Enjoy with crackers of carrots.

Finally back

Finally, I'll find a little time to describe some of my travels. I have a good list of adventure. I live in Texas now with my little family of two children. Not always easy to find time on the computer. I always full of projects but I have a lack of time. I want to succeed to give you a passion for travel as well as my passion for cooking. I love cooking dishes especially foreign country. I'll try to give you recipes for miracle to feed the children. I will also write in english and french because a lot of my friends are English. Me voici de retour

Enfin, je vais trouver un peu de temps pour décrire quelques uns de mes voyages. J'ai une bonne liste d'aventure. J'habite maintenant le texas avec ma petite famille de deux enfants. Pas toujours évident de trouver du temps sur l'ordinateur. J'ai toujours pleins de projets mais j'ai un manque de temps. Je veux réussir a vous donner la passion des voyages comme moi ainsi que la passion de cuisiner. J'adore cuisiner surtout les plats de pays étrangé. Je vais essayer de vous donner des recettes miracle pour faire manger les enfants. Je vais aussi écrire en anglais et en francais car une grande partie de mes amis sont anglais.
