Jamaican Jerk Chicken

Chicken breast or any type of meat
Marinated in Jerk Jamaican spices
It's on the picture

It's a typical dish from Jamaica. They marinated the meat for several hour then cook it on the grill. It's nice but I found the flavor much too stronge. We didnt' like it that much but you can try if you like stronge flavor.

Jamaican Roast Fish

Fish Fillet
1 tsp Paprika
1 scotch pepper
3 tbsp butter
3 green onions
2 garlic cloves minced
thymes
salt and pepper
juice of one lime

Brush fish with lime juice and marinate with all ingredients for few hours. Rub fish with butter put in the oven at 350 for about 20-30 minutes. Easy to do but I don't like fish in oven. I think it taste fishy. I like my fish in a pan. I think I would to it in a pan on the stove next time. I didn't put any pepper for the kids, they like it, just me I didn't.

Jamaican Red Pea Soup

1/2 lbs of beef cubed for stew
2 can of red Kidney bean
5 green onions
3 carrots
2 tsp fresh thyme
1 hot pepper (hot bonnet scotch)
salt and pepper
3 potatoes
2 yams
1 can of coconut milk
flour and water and pinch of salt to make dumplings.

Boil beef in 1 liter and half of water for haft and hour. Add 2 can of bean drain and boil for 45 minutes. Add the remaining ingredients, mix well. Add dumplings, roll in your hand the size of your pinky. Simmer the soup for another hour. It's to hot for the kids. My husband really like it. I think it will be better after a day of two so the flavor will increase. It's a nice healthy soup. Enjoy.

Jamaican Curry Chicken

Vegetable oil
3 garlic clove minced
3 tsp Curry powder (Jamaican it's better)
4 Chicken breast cubed
5 green onions
4 potatos
1/4 cup of chicken broth
1 tbsp fresh ginger grated
1/2 cup coconut milk
Salt and pepper

Fry garlic in oil until brown. Add curry powder and cook 1 minute. Add chicken, stir well, add green onions, potatos, stock. Stir fry at medium heat until potatos cooked. Stir ginger and coconut milk. Simmer until sauce thickens. It's really easy and fast. I really like the flavor. It's mild, the kids love it too. It's a recipe I will do again for sure. Enjoy!

Hi everyone, We will discover Jamaica this week in different meals. It's a nice Islands in the carabbean sea. They have a lot of different dishes. They like seafood as much as chicken and beef. C'est une belle îles dans la mer des Caraibes. Ils ont beaucoup de plats différents. Ils aiment les fruits de mer aussi bien que le poulet et le boeuf.
