Fish Couscous

2 Fish Fillet
fresh Parsley
fresh cilantro
3 green onions
2 Garlic clove minced
1 tbls of fresh ginger
1 cup of couscous
1 cup cauliflower cooked
1 cup brocoli cooked
1/2 cup asparagus cooked
1 can of black bean
1/4 cup of chicken broth
1/4 cup lemon juice
Oil
Salt and pepper

First cook your couscous and your vegetable. Chop your herbs and mix haft of it with oil lemon juice salt and pepper. Rinse your fish then dry with paper towel. Dip your fish in the oil mix herbs. Cook the fish in a pan. Set aside when cooked. Take the same pan add garlic and onion and ginger. Saute for one minute. Add all of the other ingredient on low heat. Mix well. Salt and pepper. Chop your fish then mix with the couscous. Very good recipe and kids enjoy too.

Chicken Couscous

Chicken Legs Marinate chicken in fridge for 4 hours with
oil, 2 garlic clove minced, thyme, salt and pepper.

2 cup of couscous
2 garlic clove minced
1 tomato cubed
4 sundried tomato chopped
3 green onions
1 cup of sliced mushroom sliced
1 cup chicken broth
1 cup of frozen vegetable (corn, carrot, peas)
1 tbls tomato paste
1/2 cup chick peas cooked
1/4 cup of red wine
basil
parsley
salt and pepper

Fried chicken leg in a pan with butter and oil, it take about 20 minutes. Put aside  and cover with aluminium foil to keep warm. Then keep the same pan add more butter saute garlic and green onions. Add mushroom saute for another 5 minutes. Add your frozen vegetable with 1/2 cup chicken broth. Cook for 5 minutes then add tomato and chick peas. Push all mix on the side of the pan then add tomato paste in the middle and mix well with the wine then mix it with the rest when it's all smooth. Add cook couscous with 1/2 cup chicken broth. Salt and pepper and add basil and parsley. Mix well and it's ready to serve with the chicken on top. It look complicated but it's very easy. One good advice is to prepare all your ingredient before you start to cook. It's a lot quicker. Enjoy. You can make it vegan just don't add the chicken. My Vegan friend love this!
