Equatorial Guinea Chicken Paella
Chicken Thigh
4 green onions
2 garlic cloves minced
2 Cup of cooked rice
1/2cup Chicken stock
1 tsp paprika
1 tsp Oregano
1/2 tsp Cayenne pepper
salt
1/8 tsp Turmeric
1 tomato cubed
1 can of black bean
Fry chicken in butter and oil in a pan with half of the green onion and garlic. Cook throughly for about 25 minutes. Set aside. Saute the rest of green onion and garlic in butter. Add tomato, saute for about 3 minutes. then add spices and the rice. saute for another 3 minutes. Add chicken stock cook for 3 more minute. Add Black bean. Mix well, then add chicken. Let cook for about 3 minutes. Serve. It's very nice dish, easy to make. Enjoy

Texas Venison Ham Roast
250 ml red wine
salt and pepper
3 garlic cloves
Marinate your roast in red wine overnight. Cut garlic in lengthwise. Insert the garlic with a knife inside the roast at many different place. Do not make a big cut just enough for the garlic. Saute your roast on a pan on each side at high temperature just for one minute. That will seal the juice inside the roast. Then add the spice all over the roast. But in the oven covered at 300 until the roast reach 160 degree inside. You have to put a thermometer in the roast. It's important do not over cook it will be extremely hard. The meat need to be medium rare. If you like you meat over cook, this is not a dish for you. Enjoy

Benin Beef Red sauce
5 Green onions
3 garlic cloves minced
5 large tomatoes
3 Hot chillies crushed
1 Maggi cube or beef cube broth
pepper and salt
Saute Beef in oil for 2 minutes. Remove and reserve. Fry green onions, add garlic, saute for 1 minute, add tomatoes, chilies salt and pepper. Fry for 5 minutes then add 3 cup of water and the maggi cube. Simmer for 1h30 hours. It's a nice recipe but not for kids. It's too spicy. I would add 1 tbsp of ketchup in the end just to give a kick to it. Nice to try. Enjoy.

Benin Chicken Peanut Sauce
6 tbsp peanut butter unsweetned
4 cup water
oil
5 green onions
2 garlic clove minced
2 fresh diced tomatos
2 tsp thyme powder
7 carrots
2 sweet potatos
3 cup shredded cabbage
salt
Bring water to broil and add peanut butter. Simmer for 20 min. then cool and remove the extra fat from the surface. Fry chicken in oil, add green onions, then add garlic, stir, add, thyme and salt, stir, add tomato, carrot and cabbage. Stir and fry for 1 min. Then add peanut sauce, bring to broil then reduce and simmer for 20 min. cover in. Add sweet potato and cook for another 40 minutes. Taste often, need a lot of salt. I like it but I had to add more salt. It's not a stronge taste witch is good for kids. Enjoy.

Costa rica Beef tortillas
1 garlic cloves
1 green onion
salt and pepper
Hot picked banana pepper
2 cup cabbage cut finely
1 cup of fresh dice tomato
juice of 1 lemon
2 tsp olive oil
fresh cilantro
salt and pepper
saute green onion and garlic in a pan, add beef, salt and pepper. Prepare the cabbage salad in last minute. Mix in the bol cabbage, tomato, lemon juice, olive oil, cilantro, salt and pepper. Heat the tortillas in a pan. Add the beef on the tortillas, top it with the cabbage salad and add as many as you want banana pepper. Really good and easy to do. Love it.

La semaine prochaine, nous choisissons le Bénin, comme le pays que nous visiterons en plats. Le Bénin est dans le continent d'afrique de l'ouest. Ils ont beaucoup de différents types d'aliments. Nous ferons la sauce traditionnelle rouge, Ragoût de boeuf, ragoût de poisson, poulet sauce aux arachides et un plat a base de riz. J'espère que vous profitez de la gastronomie et des recettes.

Marinate Fish in juice of 2 lime, 2 tbls olive oil, fresh cilantro, 1 garlic clove minced, salt, 1/4 tps sugar.
Marinate in a dish for 10 minutes each side.

1 cup of rice cook
4 green onions
2 oranges peeles and choppes in small
1 can of dice tomato
1 can of black bean
1 tsp dried oregano
1/4 tsp cayenne pepper

Start oven at 400 f. In a pan saute garlic and green onion. Add cilantro, orange, tomato, bean, oregano, salt, cayenne pepper. Cook for about 8 minutes with cover, mix often. In a baking dish, transfer cook rice and the mixture of the bean together. Put the fish on top of it and over lap a little bit the mixture on it. Drizzle with the rest of the marinate on top of the fish. Bake in the oven for 18 minutes. Baby loves it but older kids, not so much. I did love it and my husband too. Great dish. Enjoy
