Jamaican Red Pea Soup

1/2 lbs of beef cubed for stew
2 can of red Kidney bean
5 green onions
3 carrots
2 tsp fresh thyme
1 hot pepper (hot bonnet scotch)
salt and pepper
3 potatoes
2 yams
1 can of coconut milk
flour and water and pinch of salt to make dumplings.

Boil beef in 1 liter and half of water for haft and hour. Add 2 can of bean drain and boil for 45 minutes. Add the remaining ingredients, mix well. Add dumplings, roll in your hand the size of your pinky. Simmer the soup for another hour. It's to hot for the kids. My husband really like it. I think it will be better after a day of two so the flavor will increase. It's a nice healthy soup. Enjoy.

Jamaican Curry Chicken

Vegetable oil
3 garlic clove minced
3 tsp Curry powder (Jamaican it's better)
4 Chicken breast cubed
5 green onions
4 potatos
1/4 cup of chicken broth
1 tbsp fresh ginger grated
1/2 cup coconut milk
Salt and pepper

Fry garlic in oil until brown. Add curry powder and cook 1 minute. Add chicken, stir well, add green onions, potatos, stock. Stir fry at medium heat until potatos cooked. Stir ginger and coconut milk. Simmer until sauce thickens. It's really easy and fast. I really like the flavor. It's mild, the kids love it too. It's a recipe I will do again for sure. Enjoy!

Jamaica this week

Hi everyone, We will discover Jamaica this week in different meals. It's a nice Islands in the carabbean sea. They have a lot of different dishes. They like seafood as much as chicken and beef. Enjoy this week in that beautiful sandy beach tropical Island. Salut tout le monde, Nous allons découvrir cette semaine dans la Jamaïque des repas différents. C'est une belle îles dans la mer des Caraibes. Ils ont beaucoup de plats différents. Ils aiment les fruits de mer aussi bien que le poulet et le boeuf. Profitez de cette semaine dans cette Ile tropical aux plages magnifiques.

Cayman Islands Beer Fish

Fish Fillets
juice of one lime
1 cup of flour and 1/2 cup flour in separate plate
salt and pepper
1 can of beer

Fill the bottom of a pan with oil to cover fish. You can do it in a fryer put it's messy and sticky. Brush fillet with lime juice. In a bowl mix flour, salt, pepper and gradually add beer and stir in same time. Put an extra plate with flour. Dip the fish in flour first then in the beer mixture. Fry in a pan for several minute each side. Drain on paper towel. It's nice recipe but a little bit messy and not too healthy. Better with white fish. Great with cole slaw. Enjoy

Cayman Islands Spaghetti Marinara style

3 strips of bacon
4 green onions
8 oz red wine
salt & pepper
Parsley and basil
Marinara Sauce

Cook Bacon in a pan with green onions. Cook until bacon is crispy. Drain off the oil. Then add parsley basil salt and pepper, red wine. Bring to simmer then add marinara sauce. Mix well simmer for about 5 minutes. But the sauce over top of pasta. Great easy recipe, Kids really love the flavor. Enjoy

Cayman Islands Almond fish with lemon herbed butter

Fish Fillet
Salt and pepper
1 portion of almond for 2 portion of breaded crumbs
Flour
2 eggs
Butter
Rinse fish and pat dry. Salt and pepper. Grind almond with bread to a fine powder but to not over grind otherwise it will be oily. Place in a plat. Beat eggs and place in a different plate. and put flour in a third plat. Put the fish first in flour then eggs finish with bread mixture. Cook in medium heat in a pan with butter. Sprinkle fish in your plate with lemon herb butter.

Lemon herb butter
6 tbsp butter
half of 1 lemon juice
1 tsp dill
1 tsp salt
1 tsp garlic paste
It's very easy to do. Taste delicious with the butter. Kids love it so much too. Great!

Welcome to Cayman Islands this week. Cayman Islands is located in the Caribbean sea. Beautiful beach! I will cook recipes from that country. There famous dish is turtle stew. I will not cook turtle but they have a lot of fish recipe. Enjoy the week in that nice tropical island.

Equatorial Guinea Chicken Paella

  • Equatorial Guinea Chicken Paella

Chicken Thigh
4 green onions
2 garlic cloves minced
2 Cup of cooked rice
1/2cup Chicken stock
1 tsp paprika
1 tsp Oregano
1/2 tsp Cayenne pepper
salt
1/8 tsp Turmeric
1 tomato cubed
1 can of black bean

Fry chicken in butter and oil in a pan with half of the green onion and garlic. Cook throughly for about 25 minutes. Set aside. Saute the rest of green onion and garlic in butter. Add tomato, saute for about 3 minutes. then add spices and the rice. saute for another 3 minutes. Add chicken stock cook for 3 more minute. Add Black bean. Mix well, then add chicken. Let cook for about 3 minutes. Serve. It's very nice dish, easy to make. Enjoy

Texas Venison Ham Roast

  • Texas Venison Ham Roast

250 ml red wine
salt and pepper
3 garlic cloves
Fresh Rosemary
marjoram


Marinate your roast in red wine overnight. Cut garlic in lengthwise. Insert the garlic with a knife inside the roast at many different place. Do not make a big cut just enough for the garlic. Saute your roast on a pan on each side at high temperature just for one minute. That will seal the juice inside the roast. Then add the spice all over the roast. But in the oven covered at 300 until the roast reach 160 degree inside. You have to put a thermometer in the roast. It's important do not over cook it will be extremely hard. The meat need to be medium rare. If you like you meat over cook, this is not a dish for you. Enjoy

Benin Beef Red sauce

Beef Cube
5 Green onions
3 garlic cloves minced
5 large tomatoes
3 Hot chillies crushed
1 Maggi cube or beef cube broth
pepper and salt

Saute Beef in oil for 2 minutes. Remove and reserve. Fry green onions, add garlic, saute for 1 minute, add tomatoes, chilies salt and pepper. Fry for 5 minutes then add 3 cup of water and the maggi cube. Simmer for 1h30 hours. It's a nice recipe but not for kids. It's too spicy. I would add 1 tbsp of ketchup in the end just to give a kick to it. Nice to try. Enjoy.

Benin Chicken Peanut Sauce

  • Benin Chicken Peanut Sauce
Chicken breast cubed
6 tbsp peanut butter unsweetned
4 cup water
oil
5 green onions
2 garlic clove minced
2 fresh diced tomatos
2 tsp thyme powder
7 carrots
2 sweet potatos
3 cup shredded cabbage
salt

Bring water to broil and add peanut butter. Simmer for 20 min. then cool and remove the extra fat from the surface. Fry chicken in oil, add green onions, then add garlic, stir, add, thyme and salt, stir, add tomato, carrot and cabbage. Stir and fry for 1 min. Then add peanut sauce, bring to broil then reduce and simmer for 20 min. cover in. Add sweet potato and cook for another 40 minutes. Taste often, need a lot of salt. I like it but I had to add more salt. It's not a stronge taste witch is good for kids. Enjoy.

Benin Beef Stew

Beef cubed for stew
5 Green onions
3 tbsp curry powder
2 tsp salt
pepper cayenne
1 can of coconut milk
2 sweet potatoes cut in cube deep fried
1 tbsp flour
4 tbsp butter
4 tbsp unsweetened peanut butter
4 garlic clove minced
1 hot red chili, sliced big
1 cup water
6 whole Okra, jst remove the top

First brown the beef in butter and remove. Saute green onions and garlic in the remaining butter. Add flour, mix constantly, add curry powder, salt, pepper, peanut butter. Heat for a minute at mid heat. Add coconut milk but little by little, stir all the time. Slowly add water. Cook until the sauce thinckens. Add the meat and chili. Cook for 2 hours. 20 minutes before the end add okra and sweet potatoes. It's a very nice recipe but be careful, it can be hot for children, don't add to much chili. My husband loved it, it's one of his favorite recipe. Enjoy.

Costa rica Beef tortillas

  • Costa rica Beef tortillas
ground beef or any type of meat.
1 garlic cloves
1 green onion
salt and pepper
Hot picked banana pepper

2 cup cabbage cut finely
1 cup of fresh dice tomato
juice of 1 lemon
2 tsp olive oil
fresh cilantro
salt and pepper

saute green onion and garlic in a pan, add beef, salt and pepper. Prepare the cabbage salad in last minute. Mix in the bol cabbage, tomato, lemon juice, olive oil, cilantro, salt and pepper. Heat the tortillas in a pan. Add the beef on the tortillas, top it with the cabbage salad and add as many as you want banana pepper. Really good and easy to do. Love it.

Next Country Benin (West Africa)

Next week we pick Benin as the country that we will visit in dishes. Benin is in the west africa continent. They have a lot of different type of food. We will do the traditionnal Red sauce, Beef stew, Fish stew, Chicken with peanut sauce, and dish of rice. I hope you enjoy the food and the recipe.

La semaine prochaine, nous choisissons le Bénin, comme le pays que nous visiterons en plats. Le Bénin est dans le continent d'afrique de l'ouest. Ils ont beaucoup de différents types d'aliments. Nous ferons la sauce traditionnelle rouge, Ragoût de boeuf, ragoût de poisson, poulet sauce aux arachides et un plat a base de riz. J'espère que vous profitez de la gastronomie et des recettes.

Costa Rica Tilapia dish

  • Costa Rica Tilapia Dish

Marinate Fish in juice of 2 lime, 2 tbls olive oil, fresh cilantro, 1 garlic clove minced, salt, 1/4 tps sugar.

Marinate in a dish for 10 minutes each side.

2 tbsp olive oil
fresh cilantro
1 garlic clove minced
1 cup of rice cook
4 green onions
2 oranges peeles and choppes in small
1 can of dice tomato
1 can of black bean
1 tsp dried oregano
1/4 tsp cayenne pepper
salt

Start oven at 400 f. In a pan saute garlic and green onion. Add cilantro, orange, tomato, bean, oregano, salt, cayenne pepper. Cook for about 8 minutes with cover, mix often. In a baking dish, transfer cook rice and the mixture of the bean together. Put the fish on top of it and over lap a little bit the mixture on it. Drizzle with the rest of the marinate on top of the fish. Bake in the oven for 18 minutes. Baby loves it but older kids, not so much. I did love it and my husband too. Great dish. Enjoy
